Since I joined Weight Watchers, I’ve noticed that the little “food switches” made the biggest difference. Instead of full fat Ben & Jerry’s Ice Cream (14 points per serving), I switched to lighter ice cream that was only 3 points. I can still have all of my favorite foods and don’t feel like I’m on a “diet.” Pizza is one of the “food groups” that I have been missing since I started Weight Watchers. After tinkering around in the kitchen my husband and I were able to create a 5 point pizza that still is very tasty and easy to make.
We made these on the BBQ, as it’s summer and we didn’t want to heat up the house. Ideally, it’s best to cook these pizzas in the over at 450. You want to begin by cutting the peppers into small squares. They should be about 1 inch by 1 inch. While you are cutting the peppers, you can begin breaking apart and cooking the ground turkey. Add salt and pepper to taste and Mexican seasoning to the turkey.
To keep this recipe as low points as possible, I used 99% lean. My husband is not on weight watchers, so we cooked his with ground pork instead. In fact, I cooked both my Weight Watchers version of the pizza and a heartier ground beef version for my Husband at the same time. There was a substantial point difference in the two. Here’s a small example. I like to include little differences like this in my posts so you can see how a small change can really make all the difference.
Add the cut peppers to the frying pan with the ground turkey. Add salt and pepper to taste. Cook the peppers and ground turkey for about 5 minutes until the peppers are wilted and the turkey is browned.
Once turkey and pepper’s are cooked, sprinkle the flat breads with the mixture. Scatter cheese over the top of the flatbread. Put in oven.
Bake at 450 for 7-9 minutes until the cheese is melted.
While the flatbreads are baking create the sauce. Add the non fat greek yogurt and buffalo wing sauce to a bowl. Add salt and pepper to taste. Add 3-4 tablespoons of water depending on how drizzly you want the consistency of the sauce to be.
Once the pizza is done cooking, drizzle it with Cilantro and the greek yogurt/ buffalo sauce mixture.
